OUR STORY

Äng Kusina® was established in 1988 as a trademark brand name of our modern ​“binalot” delivery and catering services. It originated from a humble carinderia that ​our grandmother managed since 1944. It was a simple sari-sari store with wooden ​benches by the roadside. Our father, who used to deliver bread from door to door on ​a horse-drawn carriage called caritela, expanded the store to the side of the house ​and added a small “turo-turo” eatery. The carinderia offered basic meals of fried eggs, ​fried rice and/or bread (the staple foods of the common people), and a cup of coffee ​on the side. As time went by, customers began to ask for more variety in their meals, ​such as tapa, longanisa, tuyo, barbeque, and tocino. These extras soon became very ​popular with our regulars and were collectively known as the Seven Classic Silogs®.


To make ordering faster and easier, my dad came up with a catchy name for his basic ​recipe: Silog, a portmanteau of Sinangag (rice) and Itlog (egg). He then added other ​catch-tags to the word silog, such as Tapsilog for tapa, sinangag, and itlog; Longsilog ​for longanisa, sinangag, and itlog; and Tocsilog for tocino, sinangag, and itlog.


He also invented the word Tikalog for tinapay, kape, and itlog. Silogs soon became a ​household name and spread across the barrios and towns. People from all walks of ​life lined up to taste the “Silog Phenomena”. The Evolution of the Silogs was born and ​eventually, Äng Kusina ng Silog® or the House of Silog® came into being.
